Grilled Clams with Spaghetti, Prosciutto, and Mixed Greens

Ingredients

  • 1/2 cup extra-virgin olive oil
  • 3/4 teaspoon dried crushed red pepper
  • 8 large leaves mustard greens, stems cut from leaves and discarded, leaves coarsely torn
  • 4 large leaves Swiss chard, stems cut from leaves and discarded, leaves coarsely torn
  • 4 large leaves collard greens, stems cut from leaves and discarded, leaves coarsely torn
  • 1/2 pound thinly sliced prosciutto
  • 40 large littleneck clams (about 8 3/4 pounds), scrubbed
  • 1/2 cup chopped fresh parsley

Recipe Preparation

  • Heat oil in heavy large pot over medium-high heat. Add garlic and crushed red pepper and stir until fragrant, about 30 seconds. Add mustard greens, chard, and collard greens and toss until beginning to wilt, about 2 minutes. Remove from heat. DO AHEAD Can be prepared 2 hours ahead. Let stand at room temperature.

  • Prepare barbecue (medium-high heat). Grill prosciutto until beginning to crisp, about 1 minute per side. Transfer prosciutto to plate. Tear each slice lengthwise into 1-inch-wide strips; add to pot with greens. Grill clams in batches, if necessary, until each opens, about 6 minutes (discard any clams that do not open). Transfer clams from grill to pot.

  • Meanwhile, cook spaghetti in another large pot of boiling salted water until just tender but still firm to bite. Drain, reserving 2 cups pasta cooking water. Add pasta to pot with greens, prosciutto, and clams. Squeeze juice from 1 lemon half over. Add parsley. Toss over medium-high heat until heated through, adding reserved pasta cooking water by 1/2 cupfuls if dry. Season with salt and pepper and more lemon juice, if desired. Transfer pasta mixture to large shallow bowl and serve.

After your tenth summer barbecue, grilling steaks and burgers could get a little boring. Certainly, you’re not yet ready to give up the goodness of a juicy steak, so why not spice things up a bit with a few unexpected yet delicious snacks you can make on your grill? Here are 10 recipes to inspire you.

1. Italian Style Grilled Meatballs with Parmesan and Pecorino

It’s hard to not love meatballs. Round, juicy, the perfect bite size, and they can be cooked in a dozen ways. And while all meatballs are tasty, the Italian variant is simply stellar. Just mix your favorite ground meat with breadcrumbs and your regular meatball spices, then go in heavy with grated parmesan and pecorino cheese.

Make bite-size meatballs, place them on skewers and cook them on your camping grill. Serve with marinara sauce.

2. Grilled Oysters and Spiced Tequila Butter

Oysters and champagne? Overrated! Take your grilling skills to the next level and impress your buddies with grilled oysters flavored with spiced tequila butter. A recipe inspired by Chef Blaine Wetzel that will bring you into an intimate relationship with the ocean. All it takes is a bucket of oysters, a few tablespoons of butter, sage leaves, and tequila.

Grill your oysters, flat side up, for about 2 minutes, place them on a platter and flavor up with a tablespoon of melted spiced butter. Garnish with a crisp sage leaf and enjoy the heavenly goodness.

3. Grilled Pizza with Prosciutto and Figs

Grilled pizza might sound crazy at first, but there is more than one reason to love it. First, it’s ridiculously easy to make. Second, it tastes divine. Third, you can even make it on your indoor grill when cold weather strikes.

Prosciutto and figs match amazingly while grilled pizza reminds of the delicious brick oven restaurant-style pizza. The main ingredients pair well with soft goat cheese and blue cheese alike, the smoky crust adds in just the right hint of flavor while a bit of peppery arugula gives the final touch. Cooking the pizza over your grill takes only a few minutes, and you can just cut it in small bites to dip in a tasty blue cheese sauce.

4. Grilled Cantaloupe Prosciutto Skewers

Cantaloupe and prosciutto is a classic Italian recipe. Just think of the melon’s sweetness combined with the divine saltiness of a 36-month Parma ham. But while the Italians just wrap slices of cantaloupe in slices of ham, you can do it better on a grill.

These skewers are made with cantaloupe balls if you want them to look fancy. Or just cut the melon in bite-size pieces if you don’t mind a more rustic aesthetics. Start to assemble your skewers with prosciutto by piercing an end of the slice, add four to six pieces of cantaloupe, then wrap your prosciutto slice around the kabob and pierce the other end with the skewer. Grill for about 6 minutes and serve with a delicious mint chutney.

5. Sweet and Sour Grilled Pineapple

Sweet and sour pineapple pairs amazingly with both sweet and savory dishes, adding a bit of freshness to the former and a bit of sweetness to the latter. Then, the smoky aroma of the grilled pineapple will completely redefine the flavor of your dish.

The coconut marinade is key to a tasty grilled pineapple. Reminding of a Pina Colada, the grilled slices of pineapple are covered in a sweet and sour marinade made from lime juice, coconut water, and a tablespoon of honey. Throw in a pinch of rum if you insist or ditch the alcohol altogether if kids are around. This grilled pineapple goes heavenly with grilled shrimps or chicken teriyaki, vanilla ice cream, or sponge cake and whipped cream.

6. Grilled Clams with Spiced Paprika Butter

Grilled seafood not only surprises, it’s also easy to make and delicious. Oysters apart, you can also grill clams. Like their bigger cousins, they cook very fast. The secret to a stellar dish is in the seasoning, a flavorful spiced paprika butter that enhances the characteristic flavor of the clams.

Prepare the spiced butter in advance and store it in the fridge. All you need is a stick of unsalted butter, smoked paprika, celery seeds, kosher salt, and cayenne pepper. Mix the ingredients and set aside for at least 6 hours, allowing the butter to absorb all flavors. Take the butter out of the fridge one or two hours before grilling to bring it to room temperature. Grill the clams on medium heat for about 5 minutes until they pop open, transfer on a platter and add a pinch of spiced butter to each clam. The melted butter will blend with the clam’s juice in a heavenly delight.

7. Grilled Ginger Cauliflower Steak

Who doesn’t love a juicy grilled steak? A staple of barbecue parties, the steak is omnipresent at almost all events. But if you’re tired of the same old flavor or just looking for a vegan-friendly dish, this ginger cauliflower steak will redefine your idea of grilling.

Rub some thick slices of cauliflower with a spicy mix made from garlic and onion powder blended with a teaspoon of ground ginger. Grill your steaks, about 8 minutes on each side, then place on a serving platter. Season your steaks with a delicious Tahini sauce mixed with coconut aminos and chili paste to give a special spicy aftertaste.

8. Grilled Spaghetti with Vegetable Skewers

Spaghetti is a staple of the Italian cuisine and the smoky flavor of the grilled spaghetti transforms a traditional dish into an interesting fusion cuisine reinterpretation. This is perhaps one of the most delicious snacks you can make on your grill, combining authentic Mediterranean flavors with the famous American cooking style.

Surprise your guests with delicious vegetable skewers featuring the veggies you like best. Simmer your spaghetti as instructed but take them off the flame one minute earlier. Place them in a grill basket and continue cooking on the grill, alongside the skewers, for about 5 minutes. Transfer the pasta to a serving platter, season it with olive oil and a dash of lemon juice, add the skewers in and mix. You’ll definitely love the smoky aromas of this classic.

9. Grilled Strawberry Cucumber Salad

If you’re not quite a foodie, the idea of making a salad out of strawberry and cucumber might sound awkward. Grilling the ingredients first could seem completely outrageous. But know that there is nothing new to adding strawberries and walnuts to a mixed greens salad, and grilling the main ingredients enhances their aromas and brings out their juices.

That said, this is definitely a dish to make if you want to impress. Slice the cucumber and grill it. Make strawberry skewers and grill them too for about 6 minutes. Mix the strawberries and cucumber with a salad of mixed greens, season with tarragon and basil, and pour over a dressing made with olive oil, a dash of balsamic vinegar and a teaspoon of agave nectar. Garnish with blue cheese and serve.

10. Spicy Grilled Watermelon with Sweet Chili Sauce

Cook watermelon? Serve it with a savory dish? Unless you take a chance and give it a try, you’ll be stuck with a boring burger forever. Definitely one of the most delicious snacks you can make on your grill, this spicy watermelon of Asian inspiration pairs wonderfully with grilled pork ribs or chicken.

You need a few thick watermelon wedges. Drizzle with honey and grill until caramelized. Place on a serving platter and garnish with cilantro and a lime dressing made of lime juice, lime zest, chili sauce, and salt. This refreshing dish will add just the right sweetness to your delicious barbecue ribs and you’ll certainly surprise your buddies with your Aaron Franklin’s skills.

                SAY CHEESE IN ITALIAN

                FONTINA
                - a traditional mountain cheese from the Valle d'Aosta in Piemonte. Full-fat and semi-soft with a sweetish flavor, fontina melts evenly and so is particularly good for cooking.

                GORGONZOLA
                - a blue cheese, originally made in Gorgonzola in Lombardia but now produced in other regions as well. It melts well and is often used in sauces. If not available, use another blue cheese.

                MASCARPONE
                - a cream cheese originally from Lombardia. Made with cream rather than milk, it is very high in fat. mascarpone is generally used in desserts such as tiramisu or instead of cream in sau ces. Widely available, it is usually sold in tubs.

                PECORINO
                - one of Italy's most popular cheeses, virtually every region produces a version. Made from sheep's milk and always by the same method, although the results varies according to the milk and aging process. Pecorino Romano is a well-known hard variety from Lazio and Sardinia.

                PROVOLONE
                - curd cheese made from cow's milk. The curds are spun and worked into large pear- or tube-shaped cheeses, then immersed in brine and bound with string. Available fresh or matured and eaten as a table cheese or used in cooking.

                RICOTTA
                - meaning "recooked". It is a soft cheese made by recooking the whey left over from making other cheeses and draining it in baskets. It is produced as a by-product of many different types of cheese and varies in fat content. Hard, salted versions are available and there is also a ricotta made from buffalo milk. Fresh ricotta cut from a wheel has a better texture and flavor than that sold in tubs.

                TALEGGIO
                - a mountain cheese originally from the Italian Alps near Bergamo, but now also made in other regions. Taleggio is a very good table and cooking cheese and should be eaten young - its flavor becomes more acidic with age. It is made in squares and has a pink-yellow crust and creamy center.
