  • 450g cod fillets
  • 225g lightly smoked cod, skin and bones removed
  • 1/2 lemon
  • 1 sprig fresh thyme
  • 450g parsnips, chopped
  • 225g potatoes
  • 50g butter
  • 1 onion, chopped
  • 250ml milk
  • 250ml whipping cream
  • salt to taste
  • ground black pepper to taste

  1. If the smoked cod has a strong smoky aroma, soak it in water for 30 minutes, drain and rinse.
  2. In a large saucepan, cover the cod and smoked cod with water and add the juice of half a lemon and the thyme. Bring the cooking liquid to a gentle simmer. Poach the fish for 8 to 10 minutes or until the fish is just cooked and tender. Remove the fish to a bowl and reserve the poaching liquid. When the fish has cooled enough to handle, break it into large bite-sized pieces. Set aside.
  3. While the cod is cooking, peel the parsnips and cut them into 5mm thick slices. Peel the potatoes, cut them into 1.25cm dice and place them in a bowl of water to prevent discolouring.
  4. In a large saucepan, melt 2/3 of butter over medium heat. Add onion and cook until wilted and golden. Add the parsnips, potatoes and 750ml of the reserved poaching liquid. Bring the mixture to the boil, reduce heat and cover. Simmer for 15 minutes or until the vegetables are tender.
  5. Heat the milk and cream in a small saucepan. Do not boil. Stir to the vegetable mixture.
  6. Add cod and smoked cod; stir. Season with salt and freshly ground pepper to taste. Just before serving, stir in remaining butter. Top each serving with freshly ground pepper and chives.

Alternatives to cod:

Try this recipe with inexpensive fresh coley or pouting. They both belong to the cod family but are much cheaper and available in larger supermarkets or fishmongers.

Pretty bland as it stands as others have said.Needs more body & umph!Second time I made it, I didn't have smoked cod available, just fresh cod fillet.When poaching the fish (step 2), I added half teaspoon fish sauce (Chinese) & some veg stock powder (half an Oxo cube is about right or about quarter of one of the higher quality larger type stock cubes or a good tablespoon of home-made veg stock)At Step 4 - the veg bit, I used all the butter at this stage but added ground black pepper to the butter before adding the onions (the flavour gets released better that way)and I added 1 x medium carrot (peeled & julienned) along with the parsnips & potatoes (diced / sliced as detaield in the reipe) once the onions were golden and allowed them to colour slightlyNew Step 4a - Then (my real change to the recipe) I added 1 quarter teaspoon garlic granules (you could use 1 x fresh garlic clove crushed) plus a good heaped teaspoon of curry powder - mine was Tesco's value as it's very similar to the 1st taste I had of curry in the 1970s and what I had to hand!! but any curry powder or paste could be added at this stage - you don't want masses - it's to give the umph that I think this dish lacks and works well with fish & parsnips particularlyI allowed that to blend in and release flavours before adding the liquidStep 5 I sort of missed out entirely (see new Step 7)Step 6 - amended - stir in the cod & season if required (may want some salt, especially if not using smoked cod)Step 5-06 Feb 2016

This recipe takes a little time but it is not hard and it is well worth the effort. You can serve it hot in winter or cold in summer, and it can be a meal all by itself. If you wish, serve a cup with a Grilled Cheese Sandwich from the grill, garlic bread, or cornbread.


Traditional Scottish Cullen Skink

Cullen skink, one of Scotland's most famous dishes, is a hearty soup that is traditionally made with smoked haddock. The name of this soup comes from Cullen, a small town in the northeast of Scotland. Skink is the Scottish term for a knuckle, shin, or hough of beef, so most soups made of these parts were called skink. When people in northern Scotland were unable to find scraps of beef due to economic strains but had plenty of fish to cook with, and smoked haddock was found everywhere, meat stews transformed into fish-based soups, but the name skink stuck.

In this version of the famous recipe, mashed potatoes add thickness and creaminess, while in other versions, the potatoes are added in chunks. The best potatoes for our skink would be waxier types rather than those traditionally used for mash.

This Cullen skink recipe is also known as smoked haddock chowder in other parts of Britain, and both dishes are very similar.​ This recipe is also a gluten-free dish as the only thickener used is potatoes.

Ingredients

  • 1 large onion (finely chopped)
  • 1 carrot (peeled and grated/shredded)
  • 1 celery stalk (finely chopped)
  • 1/2 sweet bell pepper (finely chopped)
  • 1/2 poblano pepper (finely chopped)
  • salt (ground black pepper, to taste)
  • 1 – 1 1/2 Tablespoons butter or oil
  • 1 – 2 to matoes (seeded and chopped)
  • 2 – 4 garlic cloves (minced)
  • 1 – 2 dry bay leaves
  • 8 – 10 cups water
  • 3 medium potatoes (peeled and chopped)
  • 1 1/2 lbs fish (fresh or frozen (salmon, cod or shrimp))
  • 1/2 cup heavy cream (optional)
  • 1 – 2 Tablespoons fresh herbs (dill, green onions, parsley, etc)

Instructions

  1. Prep all the vegetables.
  2. In a dutch oven or a large pot, heat the butter or oil until hot, adding the onion, carrot, celery, garlic, sweet bell pepper, jalapeno pepper. Cook on medium heat for 5-7 minutes, seasoning with salt and ground black pepper to taste, until the vegetables have softened.
  3. Add the fresh tomato, tomato paste, and dry bay leaves. Mix to combine and continue cooking for another 3-5 minutes.
  4. Pour in the water or broth, adding the potatoes also, bring to a boil, reduce the heat to a simmer. Cook until the potatoes have cooked through, about 15 minutes.
  5. Cut the cod into approximately 2 – inch pieces. Add the cod at the very end, when the rest of the vegetables are completely cooked through. You can use both fresh or frozen fish. If the fish is frozen, you can add it into the soup without thawing it it will thaw and cook through in the soup. If using frozen fish, cook for about 5-7 minutes, and 3-5 minutes if using fresh/defrosted fish.
  6. Pour in the heavy cream off the heat, if using. Garnish with fresh herbs.

Notes

If you don’t want to have any spiciness and heat in the soup, use a poblano pepper instead of the jalapeno. If you want to add more heat, you can add some cayenne pepper or crushed pepper flakes.
The tomato paste doesn’t really make the soup taste too “tomatoey”, but instead helps to balance out the flavors of the broth in this soup. I think it’s the perfect touch of acidity, but you can choose to omit the tomato paste if you prefer.

  • Red Potatoes - If you don’t have brown potatoes on hand, no biggie! You can replace them with red potatoes, and every bite will be just as scrumptious!
  • Mushrooms - If you are a fan of mushrooms, you should add in a few! They give an earthy flavor to the dish that can’t be beaten.
  • Onions - Can’t live without onions? Add some in this chowder and gobble up a bowl of hot soup.
  • Bacon - Seriously, everything is better when you add some salty bacon!
  • Spinach - Spinach is a perfect ingredient to add in so you can have some extra nutrients. Bonus points if your kids and spouse don’t notice!

Wonderful full-flavored soup and certainly worth the calories of the heavy cream. Yes, the recipe calls for 8 cups of cream for an 8 person serving. I halved it for a smaller crowd. The smoked fish (I used a whitefish fillet found at Whole Foods Market) gave it a wonderful salty, meaty flavor. Would definitely make again.

We made this recipe for my cooking club. We had to use smoked mackeral because we couldn't find smoked haddock. The general consensus was that is was a little too fishy. And, it certainly wasn't worth the calories that the heavy cream gave it!

I use a double boiler to heat milk product long enough to absorb the bouquet garni called for (i.e., herbs wrapped in cheesecloth) to avoid curdling/burning. Have not tried evaporated milk but do regularly use a combination of fat free 1/2 and 1/2 and regular 1/2 and 1/2 (50% each). I think I'm also going to add toasted herbed croutons on top and drizzle with a touch of white truffle oil.

Well, first off, my measuring cup says a pint is 2 cups, so I'm thinking the recipe is calling for 4 cups of cream. But my mother in law has always used evaporated milk,and I would probably use 2 cans of that. But for me, it would be the last thing I put in, and leave the heat on long enough to heat the milk through. I've followed directions similar to this before, and the milk has curdled, ruining the meal. Just a though.

  • 4 cups (950ml) whole milk
  • 1 bay leaf
  • 1 pound (450g) finnan haddie (Scottish smoked haddock), or homemade cold-smoked fish (see note)
  • 2 tablespoons (30g) unsalted butter
  • 1 medium (8-ounce 225g) yellow onion, finely diced
  • 1 pound (450g) Yukon gold potatoes, peel on or off as desired, cut into 1/4-inch cubes
  • 1/2 cup (120ml) heavy cream
  • Kosher or sea salt and freshly ground black pepper
  • Pinch cayenne pepper (optional)
  • Finely minced chives, for garnish

Be brave when charring the broccoli – it will provide deliciously bitter notes as a counterpoint to the smoky fish and rich anchovy cream.

250g puy lentils
750ml chicken stock
or water
2 bay leaves
500g smoked haddock fillets
300ml whole milk
300g purple sprouting broccoli,
thick stems split lengthways
7 tbsp extra-virgin olive oil
Salt and black pepper

For the anchovy cream
30g butter
8 anchovies
3 garlic cloves,
peeled and finely chopped
4 tbsp creme fraiche
Juice of ½ small lemon
1 handful
parsley leaves, roughly chopped

Wash the lentils in cold water and drain. Put them in a pan with the stock and a bay leaf, bring to a boil and simmer gently for 20-25 minutes, until just tender.

Meanwhile, lay the haddock in a wide pan, add the other bay leaf and pour over the milk (don’t worry if it doesn’t quite cover the fish). Bring to a simmer, cover and cook gently for six to eight minutes until the fish is cooked through. Remove to a warm place, turn up the heat and simmer the milk to reduce by a third.

Heat a grill to its highest setting. Toss the broccoli in two tablespoons of oil, season and grill for seven to eight minutes, turning once, and watching so that it doesn’t catch. Turn off the grill and leave the broccoli in the bottom of the oven to keep warm.

To make the cream, melt the butter in a small pan over a medium heat then add the anchovies and garlic and fry, stirring, for three to four minutes, breaking up the anchovies with a wooden spoon as you go so they melt into the butter. Once you have a thick paste, turn up the heat, pour in a ladleful of milk and simmer for a minute to deglaze the pan. Pour this back into the milk pan, add the creme fraiche and simmer for a few minutes. Check the seasoning (go easy with the salt) then return the fish to the pan to warm through.

Once the lentils are tender, stir in the remaining olive oil, squeeze over the lemon juice and season to taste. Spoon onto plates, top with the broccoli followed by the fish, then spoon over the anchovy cream and sprinkle with parsley.
